Ingredients
- 500g beef, thinly sliced
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 3 cloves garlic, minced
- 1 onion, thinly sliced
- 2 tomatoes, diced
- 200ml coconut milk
- 2 tablespoons vegetable oil
- Salt and sugar to taste
Instructions
- In a pot, heat the vegetable oil over medium heat. Sauté the garlic and onion until fragrant.
- Add the beef slices and cook until they change color.
- Pour in 1 liter of water, lemongrass, kaffir lime leaves, and tomatoes. Bring to a boil, then reduce heat and simmer for 45 minutes.
- Pour in the coconut milk and season with salt and sugar. Simmer for an additional 10 minutes.
- Remove the lemongrass stalks and kaffir lime leaves before serving.
