Ingredients

  • 500g beef, thinly sliced
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 3 cloves garlic, minced
  • 1 onion, thinly sliced
  • 2 tomatoes, diced
  • 200ml coconut milk
  • 2 tablespoons vegetable oil
  • Salt and sugar to taste

Instructions

  1. In a pot, heat the vegetable oil over medium heat. Sauté the garlic and onion until fragrant.
  2. Add the beef slices and cook until they change color.
  3. Pour in 1 liter of water, lemongrass, kaffir lime leaves, and tomatoes. Bring to a boil, then reduce heat and simmer for 45 minutes.
  4. Pour in the coconut milk and season with salt and sugar. Simmer for an additional 10 minutes.
  5. Remove the lemongrass stalks and kaffir lime leaves before serving.
