Soto Daging (spiced Beef Soup)

Ingredients

  • 500g beef, cut into cubes
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 3 cloves garlic, minced
  • 1 red onion, thinly sliced
  • 2 tomatoes, cut into wedges
  • 200g bean sprouts
  • 2 tablespoons cooking oil
  • 1 tablespoon tamarind paste
  • 1 tablespoon sweet soy sauce
  • Salt to taste
  • Pepper to taste
  • 4 cups beef broth

Instructions

  1. In a pot, heat the cooking oil over medium heat. Sauté the garlic and onion until fragrant.
  2. Add the beef cubes and cook until browned.
  3. Pour in the beef broth and add the lemongrass, kaffir lime leaves, tamarind paste, and sweet soy sauce. Season with salt and pepper.
  4. Simmer for 45-60 minutes until the beef is tender.
  5. Add the tomatoes and bean sprouts, and cook for another 5 minutes.
  6. Remove the lemongrass stalks and kaffir lime leaves before serving.
