Soto Daging (spiced Beef Soup)
Soto Daging is a traditional Indonesian beef soup that is rich in flavor and spices. This dish originates from Palembang, a city in South Sumatra, and is a popular comfort food enjoyed by many.
Ingredients
- 500g beef, cut into cubes
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 3 cloves garlic, minced
- 1 red onion, thinly sliced
- 2 tomatoes, cut into wedges
- 200g bean sprouts
- 2 tablespoons cooking oil
- 1 tablespoon tamarind paste
- 1 tablespoon sweet soy sauce
- Salt to taste
- Pepper to taste
- 4 cups beef broth
Instructions
- In a pot, heat the cooking oil over medium heat. Sauté the garlic and onion until fragrant.
- Add the beef cubes and cook until browned.
- Pour in the beef broth and add the lemongrass, kaffir lime leaves, tamarind paste, and sweet soy sauce. Season with salt and pepper.
- Simmer for 45-60 minutes until the beef is tender.
- Add the tomatoes and bean sprouts, and cook for another 5 minutes.
- Remove the lemongrass stalks and kaffir lime leaves before serving.
