  • 4 cups vegetable broth
  • 1 lemongrass stalk, bruised
  • 4 kaffir lime leaves
  • 1 turmeric leaf, torn
  • 1 tomato, diced
  • 1 red chili, sliced
  • 1 shallot, sliced
  • 3 cloves garlic, minced
  • 1 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp turmeric powder
  • 1/2 tsp salt
  • 1/4 tsp sugar
  • 2 tbsp cooking oil

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Sauté the shallot and garlic until fragrant.
  2. Add the ground coriander, cumin, and turmeric powder. Stir well to combine.
  3. Pour in the vegetable broth and add the lemongrass, kaffir lime leaves, and turmeric leaf. Bring to a simmer.
  4. Add the tofu, eggplant, tomato, red chili, salt, and sugar. Cook for 15-20 minutes until the vegetables are tender.
  5. Adjust the seasoning to taste. Remove the lemongrass, kaffir lime leaves, and turmeric leaf before serving.
