Ingredients
- 400g firm tofu, cubed
- 2 eggplants, sliced
- 4 cups vegetable broth
- 1 lemongrass stalk, bruised
- 4 kaffir lime leaves
- 1 turmeric leaf, torn
- 1 tomato, diced
- 1 red chili, sliced
- 1 shallot, sliced
- 3 cloves garlic, minced
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 1/2 tsp turmeric powder
- 1/2 tsp salt
- 1/4 tsp sugar
- 2 tbsp cooking oil
Instructions
- In a large pot, heat the cooking oil over medium heat. Sauté the shallot and garlic until fragrant.
- Add the ground coriander, cumin, and turmeric powder. Stir well to combine.
- Pour in the vegetable broth and add the lemongrass, kaffir lime leaves, and turmeric leaf. Bring to a simmer.
- Add the tofu, eggplant, tomato, red chili, salt, and sugar. Cook for 15-20 minutes until the vegetables are tender.
- Adjust the seasoning to taste. Remove the lemongrass, kaffir lime leaves, and turmeric leaf before serving.
