Sotong Kangkung (Squid and Water Spinach Stir-fry)
Squid and Water Spinach Stir-fry (Sotong Kangkung) is a popular Malay dish known for its flavorful combination of tender squid and crunchy water spinach, stir-fried in a savory sauce.
Ingredients
- 500g squid, cleaned and sliced
- 300g water spinach (kangkung), cut into 2-inch lengths
- 3 cloves garlic, minced
- 2 red chilies, sliced
- 2 tablespoons oyster sauce
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground white pepper
- 2 tablespoons cooking oil
Instructions
- Heat the cooking oil in a wok or large skillet over high heat.
- Add the minced garlic and sliced red chilies, and stir-fry for 1 minute until fragrant.
- Add the sliced squid and stir-fry for 2-3 minutes until the squid turns opaque.
- Push the squid to the side of the wok, then add the water spinach to the center. Stir-fry for 1-2 minutes until the spinach wilts.
- Combine the squid and spinach, then add the oyster sauce, soy sauce, sugar, salt, and white pepper. Stir-fry for another 1-2 minutes to coat everything evenly.
- Remove from heat and transfer to a serving dish.
