Soup (delectable Sope)
This delectable Albanian Soup, known as Sope, is a comforting and hearty dish that is perfect for a cozy night in. Made with a rich broth and a variety of vegetables and meats, this soup is sure to warm you up from the inside out.
Ingredients
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, sliced
- 1 potato, peeled and cubed
- 1 pound beef, cubed
- 6 cups beef broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 cup chopped fresh parsley
Instructions
- In a large pot, heat some oil over medium heat. Add the onions, carrots, and celery, and cook until softened.
- Add the beef and cook until browned on all sides.
- Pour in the beef broth and add the potato, salt, pepper, and thyme. Bring to a boil, then reduce heat and let simmer for 45 minutes.
- Stir in the parsley and let simmer for an additional 10 minutes.
- Adjust seasoning to taste and serve hot.
