Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, sliced
  • 1 potato, peeled and cubed
  • 1 pound beef, cubed
  • 6 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup chopped fresh parsley

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions, carrots, and celery, and cook until softened.
  2. Add the beef and cook until browned on all sides.
  3. Pour in the beef broth and add the potato, salt, pepper, and thyme. Bring to a boil, then reduce heat and let simmer for 45 minutes.
  4. Stir in the parsley and let simmer for an additional 10 minutes.
  5. Adjust seasoning to taste and serve hot.
