Soup Joumou (haitian Pumpkin Soup)
Soup Joumou, also known as Haitian Pumpkin Soup, is a traditional Haitian dish that is typically served on New Year's Day to celebrate Haitian independence. This flavorful and hearty soup is made with a combination of ingredients that create a rich and satisfying dish.
Ingredients
- 1 medium pumpkin, peeled and cubed
- 1 lb beef, cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 leek, sliced
- 1 turnip, diced
- 1 celery stalk, chopped
- 1 scotch bonnet pepper, whole
- 1 cup pasta, such as macaroni or spaghetti
- 1 cup heavy cream
- 6 cups beef or vegetable broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the beef chunks and brown on all sides.
- Add the onion and garlic to the pot and sauté until fragrant.
- Pour in the broth and bring to a boil. Add the pumpkin, carrots, potatoes, leek, turnip, celery, and scotch bonnet pepper. Simmer for 1 hour.
- Add the pasta and continue to simmer until the pasta is cooked.
- Stir in the heavy cream and season with salt and pepper to taste.
- Remove the scotch bonnet pepper before serving.
