Soup Joumou (haitian Pumpkin Soup)

Ingredients

  • 1 medium pumpkin, peeled and cubed
  • 1 lb beef, cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 leek, sliced
  • 1 turnip, diced
  • 1 celery stalk, chopped
  • 1 scotch bonnet pepper, whole
  • 1 cup pasta, such as macaroni or spaghetti
  • 1 cup heavy cream
  • 6 cups beef or vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the beef chunks and brown on all sides.
  2. Add the onion and garlic to the pot and sauté until fragrant.
  3. Pour in the broth and bring to a boil. Add the pumpkin, carrots, potatoes, leek, turnip, celery, and scotch bonnet pepper. Simmer for 1 hour.
  4. Add the pasta and continue to simmer until the pasta is cooked.
  5. Stir in the heavy cream and season with salt and pepper to taste.
  6. Remove the scotch bonnet pepper before serving.
