Ingredients

  • 1 medium pumpkin, peeled and diced
  • 1 lb beef, cut into cubes
  • 2 carrots, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 scotch bonnet pepper, whole
  • 1 leek, sliced
  • 1 celery stalk, chopped
  • 1 potato, diced
  • 1 turnip, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup green onions, chopped
  • 1 tsp thyme
  • 1 tsp allspice
  • Salt and pepper to taste
  • 6 cups beef or vegetable broth

Instructions

  1. In a large pot, brown the beef over medium heat.
  2. Add the onions, garlic, and scotch bonnet pepper, and sauté until the onions are translucent.
  3. Add the pumpkin, carrots, leek, celery, potato, turnip, parsley, green onions, thyme, and allspice to the pot.
  4. Pour in the broth and bring the soup to a boil.
  5. Reduce the heat and let the soup simmer for about 1 hour, or until the vegetables are tender and the flavors have melded together.
  6. Season with salt and pepper to taste.
  7. Remove the scotch bonnet pepper before serving.
