Soup Joumou (pumpkin Soup)
Soup Joumou, also known as Pumpkin Soup, is a traditional dish from Saint Lucian Cuisine that is typically served on New Year's Day to celebrate independence. This hearty and flavorful soup is made with a variety of ingredients and is a symbol of freedom and unity.
Ingredients
- 1 medium pumpkin, peeled and diced
- 1 lb beef, cut into cubes
- 2 carrots, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 1 scotch bonnet pepper, whole
- 1 leek, sliced
- 1 celery stalk, chopped
- 1 potato, diced
- 1 turnip, diced
- 1/4 cup parsley, chopped
- 1/4 cup green onions, chopped
- 1 tsp thyme
- 1 tsp allspice
- Salt and pepper to taste
- 6 cups beef or vegetable broth
Instructions
- In a large pot, brown the beef over medium heat.
- Add the onions, garlic, and scotch bonnet pepper, and sauté until the onions are translucent.
- Add the pumpkin, carrots, leek, celery, potato, turnip, parsley, green onions, thyme, and allspice to the pot.
- Pour in the broth and bring the soup to a boil.
- Reduce the heat and let the soup simmer for about 1 hour, or until the vegetables are tender and the flavors have melded together.
- Season with salt and pepper to taste.
- Remove the scotch bonnet pepper before serving.
