Ingredients
- 1 cup basmati rice
- 1 lb beef or lamb, cubed
- 1 onion, chopped
- 3 tomatoes, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 1/2 cup peas
- 1/4 cup vegetable oil
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp coriander
- Salt and pepper to taste
- 6 cups water or beef broth
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onions and cook until they are soft and translucent.
- Add the cubed beef or lamb to the pot and brown on all sides.
- Stir in the cumin, turmeric, coriander, salt, and pepper.
- Add the diced tomatoes and cook for a few minutes until they start to break down.
- Pour in the water or beef broth and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let the soup simmer for 30 minutes.
- Stir in the rice, carrots, potatoes, and peas. Cover and simmer for an additional 20 minutes, or until the rice and vegetables are tender.
- Adjust the seasoning with salt and pepper if needed.
- Serve the soup hot and enjoy!
