Ingredients
- 1 can (14 oz) coconut milk
- 2 cups chicken or vegetable broth
- 1 can (5 oz) tuna, drained
- 8 oz rice noodles
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1 tsp brown sugar
- Salt and pepper to taste
- Fresh cilantro and lime wedges for garnish
Instructions
- In a large pot, combine the coconut milk and broth. Bring to a simmer over medium heat.
- Add the tuna, rice noodles, red bell pepper, carrot, garlic, and ginger to the pot. Cook for 8-10 minutes, or until the noodles are tender.
- Stir in the soy sauce, fish sauce, lime juice, and brown sugar. Season with salt and pepper to taste.
- Divide the soup into bowls and garnish with fresh cilantro and lime wedges.
