Soupe de banane verte, or Green Plantain Soup, is a traditional dish from French Guiana that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 4 green plantains, peeled and chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the chopped green plantains to the pot and stir to combine with the onion and garlic.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let the soup simmer for 30 minutes, or until the plantains are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
- Season the soup with salt and pepper to taste.
- Serve the soupe de banane verte hot, garnished with a drizzle of olive oil and freshly ground black pepper.
