Ingredients

  • 4 green plantains, peeled and chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the chopped green plantains to the pot and stir to combine with the onion and garlic.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and let the soup simmer for 30 minutes, or until the plantains are tender.
  6. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
  7. Season the soup with salt and pepper to taste.
  8. Serve the soupe de banane verte hot, garnished with a drizzle of olive oil and freshly ground black pepper.
