Ingredients
- 2 cups dried black beans
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 green bell pepper, diced
- 6 cups vegetable broth
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Rinse the black beans and soak them in water overnight.
- In a large pot, sauté the onion and garlic until fragrant.
- Add the tomatoes, carrot, celery, and bell pepper. Cook for 5 minutes.
- Drain the soaked beans and add them to the pot.
- Pour in the vegetable broth and add the bay leaf. Bring to a boil, then reduce heat and simmer for 1 hour, or until the beans are tender.
- Season with salt and pepper to taste.
