Soupe De Noix De Palme Avec Pounded Yam (palm Nut Soup With Pounded Yam)
Soupe de Noix de Palme, also known as Palm Nut Soup, is a traditional dish in Benin cuisine. This rich and flavorful soup is made from palm nuts and is typically served with Pounded Yam, a popular starchy side dish in West Africa.
Ingredients
- 2 cups palm nuts
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 bell pepper, chopped
- 1 scotch bonnet pepper, chopped
- 1 cup cooked, shredded chicken
- 2 cups water or chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, boil the palm nuts in water for 15 minutes, then remove from heat and allow to cool.
- Once cooled, remove the outer shell of the palm nuts and blend the kernels with 2 cups of water or chicken broth to make a smooth paste.
- Strain the palm nut paste through a fine sieve to extract the palm nut milk, then set aside.
- In a separate pot, sauté the chopped onion, tomatoes, bell pepper, and scotch bonnet pepper until softened.
- Add the shredded chicken to the pot and cook for a few minutes.
- Pour in the palm nut milk and simmer for 30-40 minutes, stirring occasionally.
- Season with salt and pepper to taste.
