Ingredients

  • 2 cups palm nuts
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 bell pepper, chopped
  • 1 scotch bonnet pepper, chopped
  • 1 cup cooked, shredded chicken
  • 2 cups water or chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, boil the palm nuts in water for 15 minutes, then remove from heat and allow to cool.
  2. Once cooled, remove the outer shell of the palm nuts and blend the kernels with 2 cups of water or chicken broth to make a smooth paste.
  3. Strain the palm nut paste through a fine sieve to extract the palm nut milk, then set aside.
  4. In a separate pot, sauté the chopped onion, tomatoes, bell pepper, and scotch bonnet pepper until softened.
  5. Add the shredded chicken to the pot and cook for a few minutes.
  6. Pour in the palm nut milk and simmer for 30-40 minutes, stirring occasionally.
  7. Season with salt and pepper to taste.
