Ingredients

  • 1 lb white fish fillets, such as cod or tilapia
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups fish or vegetable broth
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1 baguette, sliced and toasted (for serving)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and diced red bell pepper to the pot. Cook for another 3-4 minutes.
  3. Stir in the diced tomatoes, fish or vegetable broth, ground cumin, paprika, and cayenne pepper. Bring the mixture to a simmer.
  4. Gently place the fish fillets into the simmering broth. Cover the pot and let the fish cook for about 10-12 minutes, or until it easily flakes with a fork.
  5. Season the stew with salt and pepper to taste. Stir in the chopped cilantro.
  6. Serve the Soupe de Poisson hot, with toasted baguette slices on the side.
