Soupe De Poisson (fragrant Fish Stew)

Ingredients
- 1 lb white fish fillets, such as cod or tilapia
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 4 cups fish or vegetable broth
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- 1 baguette, sliced and toasted (for serving)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and diced red bell pepper to the pot. Cook for another 3-4 minutes.
- Stir in the diced tomatoes, fish or vegetable broth, ground cumin, paprika, and cayenne pepper. Bring the mixture to a simmer.
- Gently place the fish fillets into the simmering broth. Cover the pot and let the fish cook for about 10-12 minutes, or until it easily flakes with a fork.
- Season the stew with salt and pepper to taste. Stir in the chopped cilantro.
- Serve the Soupe de Poisson hot, with toasted baguette slices on the side.
