Ingredients
- 1 small giraumon pumpkin, peeled and diced
- 1 onion, chopped
- 2 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 potato, peeled and diced
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, garlic, and ginger until fragrant.
- Add the diced pumpkin and potato, and pour in the vegetable broth.
