Ingredients
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground ginger
- 1/2 tsp cayenne pepper
- 1 cup peanut butter
- 6 cups vegetable broth
- 2 sweet potatoes, peeled and diced
- 1 cup okra, sliced
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the minced garlic, ground ginger, and cayenne pepper, and cook for another 2 minutes.
- Whisk in the peanut butter until smooth.
- Pour in the vegetable broth and stir to combine.
- Add the diced sweet potatoes and sliced okra to the pot.
- Season with salt and pepper, then bring the soup to a boil.
- Reduce the heat to low, cover, and simmer for 45 minutes to 1 hour, or until the sweet potatoes are tender.
- Adjust the seasoning if needed, then serve hot.
