Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground ginger
  • 1/2 tsp cayenne pepper
  • 1 cup peanut butter
  • 6 cups vegetable broth
  • 2 sweet potatoes, peeled and diced
  • 1 cup okra, sliced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic, ground ginger, and cayenne pepper, and cook for another 2 minutes.
  4. Whisk in the peanut butter until smooth.
  5. Pour in the vegetable broth and stir to combine.
  6. Add the diced sweet potatoes and sliced okra to the pot.
  7. Season with salt and pepper, then bring the soup to a boil.
  8. Reduce the heat to low, cover, and simmer for 45 minutes to 1 hour, or until the sweet potatoes are tender.
  9. Adjust the seasoning if needed, then serve hot.
