Ingredients

  • 1 whole chicken, cut into pieces

  • 3 cloves garlic, minced
  • 2 inches ginger, sliced
  • 3 red chilies, sliced
  • 1 lemongrass stalk, smashed
  • 5 kaffir lime leaves
  • 1 cup water
  • Salt to taste

Instructions

  1. In a large pot, combine the chicken, bamboo shoots, shallots, garlic, ginger, red chilies, lemongrass, and kaffir lime leaves.
  2. Add water and season with salt.
  3. Cover the pot and cook over medium heat for 1 hour, or until the chicken is tender and the flavors have melded together.
  4. Serve hot with steamed rice.
