Ingredients
- 1 whole chicken, cut into pieces
- 1 cup bamboo shoots, sliced
- 5 shallots, sliced
- 3 cloves garlic, minced
- 2 inches ginger, sliced
- 3 red chilies, sliced
- 1 lemongrass stalk, smashed
- 5 kaffir lime leaves
- 1 cup water
- Salt to taste
Instructions
- In a large pot, combine the chicken, bamboo shoots, shallots, garlic, ginger, red chilies, lemongrass, and kaffir lime leaves.
- Add water and season with salt.
- Cover the pot and cook over medium heat for 1 hour, or until the chicken is tender and the flavors have melded together.
- Serve hot with steamed rice.
