Ingredients

  • 1 whole chicken, cut into pieces
  • 2 carrots, chopped
  • 2 parsnips, chopped
  • 1 onion, chopped
  • 1 celery root, chopped
  • 1 bunch of fresh parsley
  • 1 bunch of fresh dill
  • 2-3 bay leaves
  • Salt and pepper to taste
  • 4 eggs
  • 1 lemon, juiced

Instructions

  1. In a large pot, bring the chicken pieces to a boil and skim off any foam that rises to the surface.
  2. Add the chopped carrots, parsnips, onion, celery root, parsley, dill, bay leaves, salt, and pepper. Simmer for 20-25 minutes until the chicken is cooked through and the vegetables are tender.
  3. In a separate bowl, beat the eggs and lemon juice together.
  4. Slowly pour the egg mixture into the soup while stirring constantly. The eggs will cook and form small strands in the soup.
  5. Remove the pot from the heat and let it sit for a few minutes before serving.
