Sour Soup (zeamă)
Sour Soup, known as Zeamă in Moldova, is a traditional dish that is both comforting and refreshing. This soup is a staple in Moldovan cuisine and is often enjoyed during cold winter days or as a remedy for a hangover.
Ingredients
- 1 whole chicken, cut into pieces
- 2 carrots, chopped
- 2 parsnips, chopped
- 1 onion, chopped
- 1 celery root, chopped
- 1 bunch of fresh parsley
- 1 bunch of fresh dill
- 2-3 bay leaves
- Salt and pepper to taste
- 4 eggs
- 1 lemon, juiced
Instructions
- In a large pot, bring the chicken pieces to a boil and skim off any foam that rises to the surface.
- Add the chopped carrots, parsnips, onion, celery root, parsley, dill, bay leaves, salt, and pepper. Simmer for 20-25 minutes until the chicken is cooked through and the vegetables are tender.
- In a separate bowl, beat the eggs and lemon juice together.
- Slowly pour the egg mixture into the soup while stirring constantly. The eggs will cook and form small strands in the soup.
- Remove the pot from the heat and let it sit for a few minutes before serving.
