Ingredients

  • 1 cup active sourdough starter
  • 3 cups bread flour
  • 1 1/2 teaspoons salt
  • 1 cup lukewarm water

Instructions

  1. In a large bowl, combine the sourdough starter, bread flour, salt, and water. Mix until a shaggy dough forms.
  2. Cover the bowl with a kitchen towel and let the dough rest at room temperature for 30 minutes.
  3. After 30 minutes, perform a series of stretches and folds on the dough to develop the gluten. Repeat this process every 30 minutes for 2 hours.
  4. Transfer the dough to a lightly floured surface and shape it into a round loaf. Place the dough in a proofing basket lined with a kitchen towel dusted with flour.
  5. Cover the dough with the towel and let it proof at room temperature for 4-12 hours, or until it has doubled in size.
  6. Preheat the oven to 450°F (230°C). Place a Dutch oven with the lid on in the oven to preheat for 30 minutes.
  7. Carefully transfer the proofed dough to the preheated Dutch oven. Score the top of the dough with a sharp knife.
  8. Cover the Dutch oven with the lid and bake the bread for 20 minutes. Then, remove the lid and bake for an additional 25 minutes, or until the bread is golden brown.
  9. Remove the bread from the oven and let it cool on a wire rack before slicing and serving.
