Soy Curls

Ingredients

  • 2 cups soy curls
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rehydrate the soy curls in a bowl of warm water for 10 minutes, then drain and squeeze out excess water.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until fragrant.
  3. Add the bell pepper and mushrooms to the skillet and cook until they start to soften.
  4. Stir in the rehydrated soy curls, soy sauce, smoked paprika, and cumin. Cook for an additional 5-7 minutes, stirring occasionally.
  5. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
