Soy Curls

Ingredients
- 2 cups soy curls
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup mushrooms, sliced

- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rehydrate the soy curls in a bowl of warm water for 10 minutes, then drain and squeeze out excess water.
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until fragrant.
- Add the bell pepper and mushrooms to the skillet and cook until they start to soften.
- Stir in the rehydrated soy curls, soy sauce, smoked paprika, and cumin. Cook for an additional 5-7 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
