Ingredients

  • 2 cups cooked white rice, chilled
  • 1 can (12 oz) spam, diced
  • 1 cup pineapple chunks, fresh or canned
  • 1/2 cup frozen peas and carrots mix
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1/2 onion, diced
  • 2 green onions, chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  2. Add the diced spam and cook until browned, about 5 minutes.
  3. Push the spam to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through, then mix with the spam.
  4. Stir in the garlic and onion, and cook for 2-3 minutes until softened.
  5. Add the chilled rice, pineapple chunks, and frozen peas and carrots. Stir well to combine.
  6. Drizzle the soy sauce over the rice and mix until everything is evenly coated. Cook for an additional 5-7 minutes, stirring occasionally.
  7. Season with salt and pepper to taste, then sprinkle with chopped green onions before serving.
