Spam Fried Rice With Pineapple

Ingredients
- 2 cups cooked white rice, chilled
- 1 can (12 oz) spam, diced
- 1 cup pineapple chunks, fresh or canned
- 1/2 cup frozen peas and carrots mix
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 cloves garlic, minced
- 1/2 onion, diced
- 2 green onions, chopped
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the diced spam and cook until browned, about 5 minutes.
- Push the spam to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through, then mix with the spam.
- Stir in the garlic and onion, and cook for 2-3 minutes until softened.
- Add the chilled rice, pineapple chunks, and frozen peas and carrots. Stir well to combine.
- Drizzle the soy sauce over the rice and mix until everything is evenly coated. Cook for an additional 5-7 minutes, stirring occasionally.
- Season with salt and pepper to taste, then sprinkle with chopped green onions before serving.
