Ingredients

  • 1 package (10 ounces) frozen chopped spinach, thawed and drained
  • 1 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped green onions
  • 2 eggs, lightly beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 24 sheets phyllo dough, thawed
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease mini muffin cups.
  2. In a large bowl, mix together the spinach, feta cheese, Parmesan cheese, dill, green onions, eggs, salt, pepper, and nutmeg.
  3. Place one sheet of phyllo dough on a clean surface and brush lightly with melted butter. Top with another sheet of phyllo and brush with more butter. Repeat with 2 more sheets of phyllo, for a total of 4 layers.
  4. Cut the layered phyllo into 6 squares. Gently press each square into a mini muffin cup.
  5. Spoon the spinach mixture into the phyllo cups.
  6. Bake in the preheated oven for 15 to 20 minutes, or until the phyllo is golden brown and crisp.
  7. Remove from the oven and let cool for a few minutes before serving.
