Ingredients

  • 1 pound fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped fresh dill
  • 1/2 cup chopped green onions
  • 2 eggs, lightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, melted
  • 12 sheets phyllo pastry

Instructions

  1. In a large bowl, combine the chopped spinach, feta cheese, ricotta cheese, Parmesan cheese, dill, green onions, eggs, salt, pepper, and nutmeg. Mix well.
  2. Preheat the oven to 350°F (175°C). Brush a 9x13 inch baking dish with melted butter.
  3. Place one sheet of phyllo pastry in the prepared baking dish and brush it with melted butter. Repeat with 5 more sheets, brushing each sheet with butter.
  4. Spoon the spinach and cheese mixture over the phyllo layers and spread it out evenly.
  5. Layer the remaining phyllo sheets on top of the spinach mixture, brushing each sheet with melted butter.
  6. Score the top layer of phyllo into squares or diamonds using a sharp knife.
  7. Bake in the preheated oven for 45-50 minutes, or until the phyllo is golden brown and crispy.
  8. Allow the spanakopita to cool for a few minutes before cutting into portions and serving.
