Spanakopita (epirotic Spinach Pie)
Spanakopita is a traditional Greek pie made with layers of flaky phyllo pastry and a savory filling of spinach, feta cheese, and herbs. This Epirotic version of the dish features a unique blend of flavors and is a perfect option for a delicious and nutritious meal.
Ingredients
- 1 pound fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup ricotta cheese
- 1/2 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup green onions, chopped
- 2 eggs, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup unsalted butter, melted
- 12 sheets phyllo pastry
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the chopped spinach, feta cheese, ricotta cheese, dill, parsley, green onions, eggs, salt, pepper, and nutmeg. Mix well.
- Brush a 9x13 inch baking dish with melted butter. Layer 6 sheets of phyllo pastry in the dish, brushing each sheet with melted butter before adding the next.
- Spoon the spinach and cheese mixture over the phyllo pastry in an even layer.
- Layer the remaining 6 sheets of phyllo pastry on top of the spinach mixture, again brushing each sheet with melted butter.
- Score the top layer of phyllo pastry into squares or triangles, being careful not to cut all the way through to the filling.
- Bake in the preheated oven for 45 minutes, or until the phyllo pastry is golden brown and crispy.
- Allow the spanakopita to cool for a few minutes before cutting and serving.
