Spanakorizo (greek Lemon Rice)

Ingredients

  • 2 cups long-grain rice
  • 4 cups vegetable broth
  • 1 pound fresh spinach, chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the rice to the pot and stir to coat with the oil. Cook for 2-3 minutes, until the rice starts to turn translucent.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  4. Add the chopped spinach, dill, and parsley to the pot. Stir well and continue to cook for another 5-7 minutes, until the rice is tender and the spinach is wilted.
  5. Remove the pot from the heat and stir in the lemon juice. Season with salt and pepper to taste.
  6. Serve the spanakorizo hot, garnished with additional fresh herbs if desired.
