Spanakorizo (greek Lemon Rice)
Spanakorizo is a classic Greek dish made with rice, spinach, and a delicious lemony flavor. It's a simple and comforting dish that is perfect for a quick and healthy meal.
Ingredients
- 2 cups long-grain rice
- 4 cups vegetable broth
- 1 pound fresh spinach, chopped
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup lemon juice
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the rice to the pot and stir to coat with the oil. Cook for 2-3 minutes, until the rice starts to turn translucent.
- Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
- Add the chopped spinach, dill, and parsley to the pot. Stir well and continue to cook for another 5-7 minutes, until the rice is tender and the spinach is wilted.
- Remove the pot from the heat and stir in the lemon juice. Season with salt and pepper to taste.
- Serve the spanakorizo hot, garnished with additional fresh herbs if desired.
