Spanish Gazpacho

Ingredients

  • 6 ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 cups tomato juice
  • Salt and pepper to taste

Instructions

  1. In a blender, combine the tomatoes, cucumber, red bell pepper, red onion, and garlic. Blend until smooth.
  2. While the blender is running, slowly add the olive oil and red wine vinegar.
  3. Add the tomato juice and blend until well combined.
  4. Season with salt and pepper to taste.
  5. Chill the gazpacho in the refrigerator for at least 2 hours before serving.
