Spanish-inspired Stuffed Bell Peppers With Lentils

Ingredients
- 4 large bell peppers
- 1 cup cooked lentils
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 1/2 cup shredded Manchego cheese (optional)
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, sauté the onion and garlic until softened.
- Add the cooked lentils, smoked paprika, cumin, diced tomatoes, and parsley to the skillet. Cook for 5 minutes, then remove from heat.
- Stuff the bell peppers with the lentil mixture and place them in a baking dish. If using cheese, sprinkle it on top of the stuffed peppers.
- Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10 minutes until the peppers are tender and the cheese is melted.
- Serve the stuffed peppers hot and enjoy!
