Ingredients

  • 4 large potatoes, peeled and cut into cubes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup tomato sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup mayonnaise
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss the potato cubes with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, or until golden and crispy.
  3. While the potatoes are roasting, prepare the spicy tomato sauce by combining the tomato sauce, smoked paprika, and cayenne pepper in a small saucepan. Cook over medium heat for 5 minutes, then set aside.
  4. In a separate bowl, mix the mayonnaise, minced garlic, and lemon juice to make the aioli.
  5. Once the potatoes are done, transfer them to a serving dish and drizzle with the spicy tomato sauce and aioli. Sprinkle with chopped parsley and serve hot.
