Spanish-style Meatballs In Tomato Sauce With Manchego

Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1/4 cup grated Manchego cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 onion, finely chopped
- 1 red bell pepper, diced
- 2 cups tomato sauce
- 1/2 cup chicken broth
- 1/4 cup chopped fresh parsley
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, milk, Manchego cheese, egg, garlic, paprika, salt, and black pepper. Mix until well combined, then shape the mixture into meatballs.
- Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides. Remove the meatballs from the skillet and set aside.
- In the same skillet, add the onion and red bell pepper. Cook until softened, then pour in the tomato sauce and chicken broth. Bring to a simmer.
- Return the meatballs to the skillet, cover, and simmer for 15-20 minutes, or until the meatballs are cooked through.
- Sprinkle with chopped parsley and grated Manchego cheese before serving.
