Ingredients
- 4 large eggs
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 onion, diced
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and garlic, and sauté until the onion is translucent.
- Add the diced bell peppers and tomatoes to the skillet, and cook until the vegetables are tender.
- Create four wells in the vegetable mixture and crack an egg into each well.
- Cover the skillet and cook until the egg whites are set but the yolks are still runny.
- Season with salt and pepper to taste.
- Serve hot, directly from the skillet.
