Spanish Sunrise (Amanecer Español)

Ingredients

  • 4 large eggs
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 onion, diced
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  4. Create four wells in the vegetable mixture and crack an egg into each well.
  5. Cover the skillet and cook until the egg whites are set but the yolks are still runny.
  6. Season with salt and pepper to taste.
  7. Serve hot, directly from the skillet.
