Spanish Sunshine Paella

Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup Arborio rice
- 1 teaspoon smoked paprika
- 1/2 teaspoon saffron threads
- 4 cups chicken or vegetable broth
- 1 cup frozen peas
- 1 pound jumbo shrimp, peeled and deveined
- 1/2 cup cherry tomatoes, halved
- Lemon wedges, for serving
- Fresh parsley, chopped, for garnish
Instructions
- Heat the olive oil in a large paella pan or skillet over medium heat.
- Add the onion and garlic, and sauté until softened.
- Stir in the bell peppers and cook until they begin to soften.
- Add the rice, smoked paprika, and saffron, and stir to coat the rice with the spices.
- Pour in the broth and bring to a simmer. Cook for 15-20 minutes, stirring occasionally.
- Add the peas, shrimp, and cherry tomatoes, and cook for an additional 5-7 minutes until the shrimp are pink and opaque.
- Remove from heat and let the paella rest for 5 minutes before serving.
- Garnish with fresh parsley and serve with lemon wedges.
