Sphinx Stuffed Mushrooms (فطر محشو الهرم)

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped walnuts
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the mushroom stems finely.
  3. Heat the olive oil in a pan over medium heat, then add the chopped onion and garlic. Cook until softened.
  4. Add the chopped mushroom stems and cook for 5 minutes.
  5. Remove the pan from the heat and stir in the breadcrumbs, parsley, walnuts, salt, and pepper.
  6. Stuff the mushroom caps with the mixture and place them on a baking sheet.
  7. Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
