Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into strips
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cayenne pepper
  • 1/4 cup creamy peanut butter
  • 1/4 cup coconut milk
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine soy sauce, brown sugar, lime juice, garlic, cumin, coriander, turmeric, and cayenne pepper to make the marinade.
  2. Add the chicken strips to the marinade, cover, and refrigerate for at least 1 hour.
  3. In a separate bowl, whisk together peanut butter and coconut milk to make the satay sauce.
  4. Thread the marinated chicken strips onto the soaked skewers.
  5. Heat a grill or grill pan over medium-high heat and cook the chicken skewers for 3-4 minutes per side, or until cooked through.
  6. Serve the chicken satay with the prepared satay sauce for dipping.
