Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into strips
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp cayenne pepper
- 1/4 cup creamy peanut butter
- 1/4 cup coconut milk
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine soy sauce, brown sugar, lime juice, garlic, cumin, coriander, turmeric, and cayenne pepper to make the marinade.
- Add the chicken strips to the marinade, cover, and refrigerate for at least 1 hour.
- In a separate bowl, whisk together peanut butter and coconut milk to make the satay sauce.
- Thread the marinated chicken strips onto the soaked skewers.
- Heat a grill or grill pan over medium-high heat and cook the chicken skewers for 3-4 minutes per side, or until cooked through.
