Spice Island Jerk Pork
Spice Island Jerk Pork is a flavorful and spicy dish that originates from the beautiful island of Grenada. This dish is a perfect representation of the bold and vibrant flavors of Grenadian cuisine.
Ingredients
- 2 lbs pork shoulder, cut into chunks
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 3 green onions, chopped
- 4 garlic cloves, minced
- 1 tbsp fresh thyme leaves
- 1 tsp ground allspice
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp cayenne pepper
- 1/2 tsp black pepper
- 1/4 cup vegetable oil
- 2 tbsp lime juice
Instructions
- In a bowl, combine soy sauce, brown sugar, green onions, garlic, thyme, allspice, cinnamon, nutmeg, cayenne pepper, black pepper, vegetable oil, and lime juice. Mix well to create the jerk marinade.
- Place the pork chunks in a large resealable plastic bag and pour the jerk marinade over the pork. Seal the bag and massage the marinade into the pork. Marinate in the refrigerator for at least 4 hours, or preferably overnight.
- Heat a large skillet over medium-high heat. Add the marinated pork chunks and cook for about 6-8 minutes, turning occasionally, until the pork is browned on all sides.
- Reduce the heat to low, cover the skillet, and let the pork simmer for about 45 minutes, or until it is tender and fully cooked.
- Once the pork is cooked, remove it from the skillet and let it rest for a few minutes before serving.
