Spice Island Jerk Pork

Ingredients

  • 2 lbs pork shoulder, cut into chunks
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 3 green onions, chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh thyme leaves
  • 1 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 1/4 cup vegetable oil
  • 2 tbsp lime juice

Instructions

  1. In a bowl, combine soy sauce, brown sugar, green onions, garlic, thyme, allspice, cinnamon, nutmeg, cayenne pepper, black pepper, vegetable oil, and lime juice. Mix well to create the jerk marinade.
  2. Place the pork chunks in a large resealable plastic bag and pour the jerk marinade over the pork. Seal the bag and massage the marinade into the pork. Marinate in the refrigerator for at least 4 hours, or preferably overnight.
  3. Heat a large skillet over medium-high heat. Add the marinated pork chunks and cook for about 6-8 minutes, turning occasionally, until the pork is browned on all sides.
  4. Reduce the heat to low, cover the skillet, and let the pork simmer for about 45 minutes, or until it is tender and fully cooked.
  5. Once the pork is cooked, remove it from the skillet and let it rest for a few minutes before serving.
