Ingredients

Instructions
- In a large pot, combine the rice, kidney beans, coconut milk, onion, garlic, scotch bonnet pepper, green onions, thyme, and allspice. Season with salt and pepper.
- Add enough water to cover the rice by about 1 inch.
- Place the pot over medium heat and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let the rice simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Once cooked, remove the scotch bonnet pepper and fluff the rice with a fork.
