Ingredients

Instructions

  1. In a large pot, combine the rice, kidney beans, coconut milk, onion, garlic, scotch bonnet pepper, green onions, thyme, and allspice. Season with salt and pepper.
  2. Add enough water to cover the rice by about 1 inch.
  3. Place the pot over medium heat and bring the mixture to a boil.
  4. Reduce the heat to low, cover the pot, and let the rice simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  5. Once cooked, remove the scotch bonnet pepper and fluff the rice with a fork.
