Spiced Bean Soup (Soupe de Haricots Épicée)
This Soupe de Haricots Épicée (Spiced Bean Soup) is a traditional dish from Burkinabé cuisine that is hearty, flavorful, and perfect for a cozy meal.
Ingredients
- 2 cups dried black-eyed peas
- 1 onion, chopped
- 3 tomatoes, diced
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt to taste
- 6 cups vegetable broth
- 2 tbsp oil
Instructions
- Rinse the black-eyed peas and soak them in water for 1 hour.
- In a large pot, heat the oil over medium heat and sauté the onions, garlic, and ginger until fragrant.
- Add the tomatoes, paprika, cayenne pepper, and salt. Cook for 5 minutes.
- Drain the soaked black-eyed peas and add them to the pot. Pour in the vegetable broth.
- Bring the soup to a boil, then reduce heat and let it simmer for 1 hour or until the beans are tender.
- Adjust seasoning if needed and serve hot.
