Spiced Bean Soup (Soupe de Haricots Épicée)

Ingredients

  • 2 cups dried black-eyed peas
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt to taste
  • 6 cups vegetable broth
  • 2 tbsp oil

Instructions

  1. Rinse the black-eyed peas and soak them in water for 1 hour.
  2. In a large pot, heat the oil over medium heat and sauté the onions, garlic, and ginger until fragrant.
  3. Add the tomatoes, paprika, cayenne pepper, and salt. Cook for 5 minutes.
  4. Drain the soaked black-eyed peas and add them to the pot. Pour in the vegetable broth.
  5. Bring the soup to a boil, then reduce heat and let it simmer for 1 hour or until the beans are tender.
  6. Adjust seasoning if needed and serve hot.
