Ingredients

  • 1 lb beef, cubed
  • 4 potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • Salt to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Add the chopped onion and minced garlic, sauté until fragrant.
  4. Stir in the tomato paste, paprika, cumin, black pepper, and cayenne pepper.
  5. Add the diced tomatoes and beef broth, then bring to a simmer.
  6. Add the cubed potatoes and season with salt.
  7. Cover and cook for 45-50 minutes, or until the beef and potatoes are tender.
  8. Adjust seasoning if needed, then serve hot.
