Ingredients
- 1 lb beef, cubed
- 4 potatoes, peeled and cubed
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 2 tomatoes, diced
- 2 tbsp tomato paste
- 2 cups beef broth
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- Salt to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef cubes and brown on all sides.
- Add the chopped onion and minced garlic, sauté until fragrant.
- Stir in the tomato paste, paprika, cumin, black pepper, and cayenne pepper.
- Add the diced tomatoes and beef broth, then bring to a simmer.
- Add the cubed potatoes and season with salt.
- Cover and cook for 45-50 minutes, or until the beef and potatoes are tender.
- Adjust seasoning if needed, then serve hot.
