Spiced Beef Stew (gulai Kawah)

Ingredients

  • 2 lbs beef, cut into cubes
  • 3 cups coconut milk
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 inches ginger, sliced
  • 2 lemongrass stalks, bruised
  • 3 red chilies, sliced
  • 1 cinnamon stick
  • 5 cloves
  • 5 cardamom pods
  • 1 star anise
  • 1 tsp turmeric powder
  • Salt to taste
  • Sugar to taste
  • 4 cups water

Instructions

  1. In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.
  2. Add the beef cubes and cook until browned.
  3. Pour in the coconut milk and water, then add the lemongrass, chilies, cinnamon, cloves, cardamom, star anise, and turmeric powder.
  4. Simmer the stew over low heat for 2 hours, or until the beef is tender.
  5. Season with salt and sugar to taste.
