Spiced Beef Stew (Gulai Kawah) is a traditional Malay dish that is rich in flavor and spices. This hearty stew is perfect for a comforting meal, especially during cooler weather.
Ingredients
- 2 lbs beef, cut into cubes
- 3 cups coconut milk
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 inches ginger, sliced
- 2 lemongrass stalks, bruised
- 3 red chilies, sliced
- 1 cinnamon stick
- 5 cloves
- 5 cardamom pods
- 1 star anise
- 1 tsp turmeric powder
- Salt to taste
- Sugar to taste
- 4 cups water
Instructions
- In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.
- Add the beef cubes and cook until browned.
- Pour in the coconut milk and water, then add the lemongrass, chilies, cinnamon, cloves, cardamom, star anise, and turmeric powder.
- Simmer the stew over low heat for 2 hours, or until the beef is tender.
- Season with salt and sugar to taste.
