Ingredients
- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1 cup chicken broth
- 1/2 cup green olives
- 2 tablespoons chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt and pepper.
- Heat the olive oil in a tagine or large skillet over medium heat.
- Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, ground cinnamon, ground ginger, ground turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Pour in the chicken broth and return the chicken thighs to the skillet.
- Bring the liquid to a simmer, then reduce the heat to low, cover, and cook for 45 minutes.
- Stir in the green olives and cook for an additional 10 minutes.
- Sprinkle with chopped cilantro before serving.
