Spiced Chicken And Olive Tagine

Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 cup chicken broth
  • 1/2 cup green olives
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Heat the olive oil in a tagine or large skillet over medium heat.
  3. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken and set aside.
  4. In the same skillet, add the chopped onion and cook until softened, about 5 minutes.
  5. Add the minced garlic, ground cumin, ground coriander, ground cinnamon, ground ginger, ground turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  6. Pour in the chicken broth and return the chicken thighs to the skillet.
  7. Bring the liquid to a simmer, then reduce the heat to low, cover, and cook for 45 minutes.
  8. Stir in the green olives and cook for an additional 10 minutes.
  9. Sprinkle with chopped cilantro before serving.
