Spiced Chicken and Rice Casserole (Casserole de Poulet et de Riz Épicée)
This Djiboutian-inspired Spiced Chicken and Rice Casserole is a flavorful and comforting dish that is perfect for a family dinner or a gathering with friends. The aromatic spices and tender chicken combined with fluffy rice create a satisfying meal that will surely become a favorite.
Ingredients
- 2 lbs chicken thighs, bone-in and skin-on
- 2 cups basmati rice
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 2 1/2 cups chicken broth
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt and pepper.
- In a large Dutch oven, heat some oil over medium-high heat. Add the chicken thighs, skin side down, and cook until golden brown, about 5 minutes per side. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic, ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the basmati rice to the pot and stir to coat with the onion and spice mixture. Pour in the chicken broth and season with salt. Nestle the browned chicken thighs into the rice mixture.
- Bring the pot to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
- Sprinkle the chopped cilantro over the casserole before serving.
