Spiced Chicken And Rice Pilaf (bhojpuri Chicken Biryani Pulao)
Spiced Chicken and Rice Pilaf, also known as Bhojpuri Chicken Biryani Pulao, is a flavorful and aromatic dish from the Bhojpuri Cuisine. This dish is a perfect combination of tender chicken and fragrant rice, cooked with a blend of traditional Indian spices.
Ingredients
- 2 cups basmati rice
- 1 lb chicken, cut into pieces
- 1 large onion, thinly sliced
- 2 tomatoes, chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1/2 cup yogurt
- 2 tbsp ghee (clarified butter)
- 1 cinnamon stick
- 4 green cardamom pods
- 1 tsp cumin seeds
- 1 tsp turmeric
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
- In a large pot, heat ghee over medium heat. Add the cinnamon stick, cardamom pods, and cumin seeds. Sauté until fragrant.
- Add the sliced onions and cook until golden brown.
- Stir in the minced garlic and grated ginger, then add the chopped tomatoes. Cook until the tomatoes are soft.
- Add the chicken pieces and cook until they are no longer pink.
- Stir in the turmeric, red chili powder, and garam masala. Cook for a few minutes.
- Whisk the yogurt and pour it into the pot. Cook for another 5 minutes.
- Layer the soaked rice over the chicken mixture. Pour 4 cups of water over the rice.
- Cover the pot and cook on low heat for 20-25 minutes, or until the rice and chicken are fully cooked.
- Garnish with fresh cilantro before serving.
