Ingredients

  • 2 cups basmati rice
  • 1 lb chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/2 cup yogurt
  • 2 tbsp ghee (clarified butter)
  • 1 cinnamon stick
  • 4 green cardamom pods
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Wash the basmati rice and soak it in water for 30 minutes. Drain and set aside.
  2. In a large pot, heat ghee over medium heat. Add the cinnamon stick, cardamom pods, and cumin seeds. Sauté until fragrant.
  3. Add the sliced onions and cook until golden brown.
  4. Stir in the minced garlic and grated ginger, then add the chopped tomatoes. Cook until the tomatoes are soft.
  5. Add the chicken pieces and cook until they are no longer pink.
  6. Stir in the turmeric, red chili powder, and garam masala. Cook for a few minutes.
  7. Whisk the yogurt and pour it into the pot. Cook for another 5 minutes.
  8. Layer the soaked rice over the chicken mixture. Pour 4 cups of water over the rice.
  9. Cover the pot and cook on low heat for 20-25 minutes, or until the rice and chicken are fully cooked.
  10. Garnish with fresh cilantro before serving.
