Spiced Chicken and Vegetable Couscous (Couscous de Poulet et de Légumes Épicé)

Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 cup couscous
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 zucchini, sliced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix the chicken with the ground cumin, ground coriander, cayenne pepper, paprika, salt, and pepper. Let it marinate for 15 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the marinated chicken and cook until browned, about 5-7 minutes. Remove the chicken from the pot and set aside.
  3. In the same pot, add the onion and garlic. Sauté until the onion is translucent.
  4. Add the carrots, zucchini, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
  5. Return the chicken to the pot and add 2 cups of water. Bring to a boil, then reduce heat and let it simmer for 15 minutes.
  6. While the chicken and vegetables are simmering, prepare the couscous according to the package instructions.
  7. Fluff the couscous with a fork and serve it on a platter. Arrange the spiced chicken and vegetables on top of the couscous. Garnish with fresh cilantro.
