Couscous de Poulet et de Légumes Épicé (Spiced Chicken and Vegetable Couscous) is a flavorful and aromatic dish from Djiboutian cuisine. This dish is a perfect combination of tender chicken, hearty vegetables, and fragrant spices, all served over fluffy couscous.
Ingredients
- 1 lb chicken thighs, boneless and skinless
- 1 cup couscous
- 1 onion, chopped
- 2 carrots, diced
- 1 zucchini, sliced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a bowl, mix the chicken with the ground cumin, ground coriander, cayenne pepper, paprika, salt, and pepper. Let it marinate for 15 minutes.
- In a large pot, heat the olive oil over medium heat. Add the marinated chicken and cook until browned, about 5-7 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add the onion and garlic. Sauté until the onion is translucent.
- Add the carrots, zucchini, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
- Return the chicken to the pot and add 2 cups of water. Bring to a boil, then reduce heat and let it simmer for 15 minutes.
- While the chicken and vegetables are simmering, prepare the couscous according to the package instructions.
- Fluff the couscous with a fork and serve it on a platter. Arrange the spiced chicken and vegetables on top of the couscous. Garnish with fresh cilantro.
