ГӀуламаш (Spiced Chicken Curry) is a traditional Chechen dish that is rich in flavor and spices. This aromatic and hearty curry is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 1.5 lbs (700g) chicken, cut into pieces
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 1 cup (240ml) coconut milk
- 2 tbsp vegetable oil
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp turmeric
- 1/2 tsp cayenne pepper
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and cook until soft and translucent.
- Add the minced garlic, grated ginger, ground coriander, ground cumin, turmeric, and cayenne pepper. Cook for 2 minutes, stirring constantly.
- Add the chicken pieces to the pot and cook until they are no longer pink on the outside.
- Add the chopped tomatoes and cook for 5 minutes, allowing them to soften.
- Pour in the coconut milk and season with salt. Stir well and bring the curry to a gentle simmer. Cover the pot and let it cook for 25-30 minutes, or until the chicken is tender and fully cooked.
- Garnish with fresh cilantro and serve the spiced chicken curry hot with steamed rice or naan bread.
