Spiced Chicken Korma

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1/2 cup cashews, ground into a paste
  • 1 cup coconut milk
  • 2 tbsp ghee or vegetable oil
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 tsp cayenne pepper
  • Salt to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a bowl, marinate the chicken with yogurt, turmeric, coriander, cumin, and salt. Let it sit for 30 minutes.
  2. In a large pan, heat ghee or oil over medium heat. Add the chopped onion and cook until soft and translucent.
  3. Add the minced garlic and grated ginger to the pan, and cook for 2 minutes.
  4. Add the marinated chicken to the pan and cook until the chicken is no longer pink.
  5. Stir in the cashew paste, coconut milk, cinnamon, cardamom, and cayenne pepper. Simmer for 15-20 minutes, stirring occasionally.
  6. Adjust the seasoning with salt, if needed. Garnish with fresh cilantro before serving.
