Spiced Chicken Korma
Spiced Chicken Korma is a classic Anglo-Indian dish that features tender chicken cooked in a rich, aromatic, and creamy sauce. This recipe is a perfect blend of Indian spices and Anglo influences, resulting in a flavorful and comforting dish.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup plain yogurt
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1/2 cup cashews, ground into a paste
- 1 cup coconut milk
- 2 tbsp ghee or vegetable oil
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/4 tsp cayenne pepper
- Salt to taste
- Fresh cilantro, for garnish
Instructions
- In a bowl, marinate the chicken with yogurt, turmeric, coriander, cumin, and salt. Let it sit for 30 minutes.
- In a large pan, heat ghee or oil over medium heat. Add the chopped onion and cook until soft and translucent.
- Add the minced garlic and grated ginger to the pan, and cook for 2 minutes.
- Add the marinated chicken to the pan and cook until the chicken is no longer pink.
- Stir in the cashew paste, coconut milk, cinnamon, cardamom, and cayenne pepper. Simmer for 15-20 minutes, stirring occasionally.
- Adjust the seasoning with salt, if needed. Garnish with fresh cilantro before serving.
