Spiced Chicken Soup (Soupe de Poulet Épicée)
Soupe de Poulet Épicée, or Spiced Chicken Soup, is a popular dish in Burkinabé cuisine. This flavorful and comforting soup is perfect for warming up on a chilly day.
Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 tomatoes, diced
- 3 carrots, sliced
- 2 potatoes, diced
- 2 cloves of garlic, minced
- 1 inch of ginger, grated
- 1 scotch bonnet pepper, chopped
- 2 tablespoons of tomato paste
- 1 teaspoon of paprika
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 8 cups of chicken broth
- Fresh cilantro for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onions and cook until softened.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the garlic, ginger, and scotch bonnet pepper, and cook for a few minutes.
- Add the diced tomatoes, tomato paste, paprika, cumin, coriander, thyme, salt, and pepper. Stir well to combine.
- Pour in the chicken broth and bring the soup to a boil. Reduce the heat and let it simmer for about 30 minutes.
- Add the sliced carrots and diced potatoes to the pot. Continue to simmer for another 20-30 minutes, or until the chicken is fully cooked and the vegetables are tender.
- Adjust the seasoning if needed, then serve the soup hot, garnished with fresh cilantro.
