Spiced Chicken Stew (ГӀуламаш)

Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 2 carrots, sliced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp coriander
  • 1/4 tsp cayenne pepper
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onions and garlic, and sauté until they are soft and translucent.
  3. Add the chicken pieces to the pot and brown them on all sides.
  4. Stir in the cumin, paprika, coriander, and cayenne pepper, and cook for a minute to toast the spices.
  5. Add the diced tomatoes, sliced bell pepper, and carrots to the pot, and pour in the chicken broth.
  6. Season with salt and pepper, then bring the stew to a boil.
  7. Reduce the heat to low, cover the pot, and let the stew simmer for 45-50 minutes, or until the chicken is cooked through and the vegetables are tender.
  8. Adjust the seasoning if needed, then serve the гӀуламаш hot with rice or bread.
