Spiced Chickpea and Spinach Salad (Salata Bil-Hummos)

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups fresh spinach leaves
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, spinach, red onion, parsley, and mint.
  2. In a small bowl, whisk together the olive oil, lemon juice, cumin, paprika, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat evenly.
  4. Adjust seasoning to taste and serve immediately.
