Ingredients
- 2 cups chickpea flour
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon berbere spice mix
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups water
- 3 tablespoons olive oil
Instructions
- In a large bowl, mix the chickpea flour, onion, tomatoes, garlic, berbere spice mix, cumin, salt, and black pepper.
- Add water gradually and mix until a smooth batter forms.
- Heat a non-stick pan over medium heat and brush with a little olive oil.
- Pour a ladleful of the batter onto the pan and spread it into a thin pancake.
- Cook for 2-3 minutes on each side until golden brown.
- Repeat with the remaining batter, adding more oil to the pan as needed.
- Serve the spiced chickpea pancakes hot with a side of yogurt or chutney.
