Spiced Chickpea Pancakes (Shiro Firfir Be'ingudai)

Ingredients

  • 2 cups chickpea flour
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon berbere spice mix
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups water
  • 3 tablespoons olive oil

Instructions

  1. In a large bowl, mix the chickpea flour, onion, tomatoes, garlic, berbere spice mix, cumin, salt, and black pepper.
  2. Add water gradually and mix until a smooth batter forms.
  3. Heat a non-stick pan over medium heat and brush with a little olive oil.
  4. Pour a ladleful of the batter onto the pan and spread it into a thin pancake.
  5. Cook for 2-3 minutes on each side until golden brown.
  6. Repeat with the remaining batter, adding more oil to the pan as needed.
  7. Serve the spiced chickpea pancakes hot with a side of yogurt or chutney.
