Spiced Chickpea Salad (Nohut Salatası)

Ingredients

  • 2 cans (15 oz) chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, red bell pepper, cucumber, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, cumin, paprika, salt, and pepper.
  3. Pour the dressing over the chickpea mixture and toss to coat evenly.
