Spiced Chickpea Salad (Shiro Firfir Be'ingudai Selatta)
Shiro Firfir Be'ingudai Selatta is a delicious and nutritious Eritrean salad made with spiced chickpeas. This salad is bursting with flavors and textures, making it a perfect side dish or light meal.
Ingredients
- 2 cups cooked chickpeas
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon berbere spice mix
- 1/4 cup olive oil
- Salt to taste
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- Juice of 1 lemon
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the onions and garlic, and sauté until the onions are translucent.
- Stir in the berbere spice mix and cook for 1-2 minutes to release the flavors.
- Add the diced tomatoes and cook for another 2-3 minutes.
- Stir in the cooked chickpeas and cook for 5 minutes, stirring occasionally.
- Remove from heat and let the mixture cool slightly.
- Transfer the chickpea mixture to a large bowl and add the chopped parsley, mint, and lemon juice. Toss to combine.
- Season with salt to taste.
- Serve the Shiro Firfir Be'ingudai Selatta at room temperature or chilled.
