Spiced Chickpea Salad (Shiro Firfir Be'ingudai Selatta)

Ingredients

  • 2 cups cooked chickpeas
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon berbere spice mix
  • 1/4 cup olive oil
  • Salt to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Juice of 1 lemon

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the onions and garlic, and sauté until the onions are translucent.
  3. Stir in the berbere spice mix and cook for 1-2 minutes to release the flavors.
  4. Add the diced tomatoes and cook for another 2-3 minutes.
  5. Stir in the cooked chickpeas and cook for 5 minutes, stirring occasionally.
  6. Remove from heat and let the mixture cool slightly.
  7. Transfer the chickpea mixture to a large bowl and add the chopped parsley, mint, and lemon juice. Toss to combine.
  8. Season with salt to taste.
  9. Serve the Shiro Firfir Be'ingudai Selatta at room temperature or chilled.
