Ingredients
- 2 cups unsweetened coconut flakes
- 1 tablespoon coconut oil
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon chili powder
- Salt to taste
- 1 tablespoon brown sugar (optional)
Instructions
- In a pan, toast the coconut flakes over medium heat until golden brown. Set aside.
- Heat the coconut oil in the same pan and sauté the shallot and garlic until fragrant.
- Add the ground coriander, cumin, turmeric, and chili powder. Stir well to combine.
- Add the toasted coconut flakes and mix until well coated with the spice mixture.
- Season with salt and brown sugar (if using), and continue to cook for another 2-3 minutes.
- Remove from heat and let it cool before serving.
